Sunday Confessions: If I Were A Better Blogger

Ahhh.....my favorite blogging day of the week!

This would be far less sporadic around here. Seriously. Even though I have a lot to say, it's been hit or miss with getting things posted. But hopefully that will start to change. I've set aside some time next week to devote to just blog stuff. Here it so hoping it will help!

I'd remember to take more blog worthy photos and then post them after being out and about. Not that anyone would know about it, but I've done some pretty fun stuff lately.  But have I posted about it? Noooooooooooo. Plus have more fun stuff coming up. Do ya'll think I'll blog about that? Probably not but it's a goal and goals are good.

I would share a recipe I made three times last  week. I am in the middle of a full-on obsession with ramen noodles. What am I, a college freshmen?! But this recipe is so easy and so good! It's essentially just: 1pkg of ramen noodles (cooked--flavor of your choice, I don't use the broth packet as none of the flavors are vegetarian so I use a vegetable bouillon cube), green onions chopped, white mushrooms chopped, vegan sausage cut into chunks and a small scoop of peanut butter. THAT'S IT. Whips up in just a few minutes and is delicious. Packed with sodium and likely not healthy, but delicious.

  1. ok you've got to share the recipe - even though i'm not a huge ramen lover (post college) I love to try new things!

  2. Sunday tends to be my favorite blogging day, too... I can always seem to come up with something to say for confessions. The rest of the week? Totally inconsistent.

  3. I love to use peanut butter in any kind of meal. :) What vegan sausages do you use?

  4. I'll definitely posting the "recipe". Hopefully within the next couple of days.

  5. I think the whole "confession" part is why I like Sunday, too. Less structure.

  6. I actually make my own sausage (I used this recipe here: http://vegweb.com/recipes/vegan-sausage) but when I'm in a pinch I always have Morning Star Farm sausage in my freeze. That isn't vegan but it's as close as I can get when I don't have time to make it myself.
